When Jesus celebrated the Last Supper with his disciples, he was celebrating the Jewish Passover, their most important feast. For the Jewish people, it is the re-living of being saved from slavery in Egypt.
We know from Matthew, Mark and Luke that it was during this meal that Jesus instituted the Eucharist, and commanded his disciples to do the very same in the future.
I find it interesting that the Church, from ancient times, chose John's gospel for Holy Thursday - the washing of the disciples' feet. (John already talked about the Eucharist in chapter 6.)
The command of Jesus, "As I have done for you, you should also do," is a powerful one. In the context of the Last Supper, John is making the point that our salvation is not just through religious observance; it comes through service/action.
